- Olive oil
- Water (or broth)
- Pepper flakes
Cooking time: 30 minutes
Finely chop equal quantities of onion, carrot, and celery.
Heat olive oil in a pot, then add onion, carrot, and celery. Cook until vegetables are translucent, roughly 5-7 min. Add sfarrata and cook another minute or two. Add pepper flakes and mix.
Add sufficient warmed vegetable broth to cover the sfarrata, adding more broth or water each time the water is fully absorbed into the sfarrata (similar to cooking risotto). Continue cooking until sfarrata is ready, roughly 30 min.
Let rest for a few minutes, covered. Serve with a drizzle of olive oil on top.
