Equal portions of:
- red bell pepper
- peeled tomatoes (150% of the portion used for the other ingredients)
- bay leaf
- olive oil
Saute oil, red peppers, and onions. Once tender, add tomatoes, garlic, thyme, bay leaf, salt, and pepper. Cook covered for 45 min.
Separately, saute eggplant and zucchini for 15 min.
Combine the eggplant and zucchini with the other ingredients and cook for 10 more minutes.
